Grateful

 

     I am very grateful for a full and crazy life! I have determined to not be disappointed when I have little time to blog and to simply write when I can. :) 

As previously mentioned, our family loves eating crepes. We don't always have the chance to eat them in the morning due to our crazy schedules, so we occasionally have breakfast for dinner, which is a family favorite. Usually, a Saturday or Sunday night is the time to whip up the following Allrecipes crepes and add berries and whipped cream on top. Mmm... yum!!!   :)


Crepes



Ingredients:

1 cup all-purpose flour

2 eggs

1/2 cup milk (we substitute with lactose-free milk)

1/2 cup water

1/4 teaspoon salt

2 Tablespoons butter, melted

*In a large mixing bowl, whisk together the flour and the eggs. Gradually add in the milk and water, stirring to combine. Add the salt and butter; beat until smooth.

*Heat a lightly oiled skillet over medium-high heat. Scoop 1/4 cup of batter onto the skillet to make each crepe. 

*Cook for 2 minutes on each side. Make sure and loosen the crepe with the edge of a spatula before attempting to turn to the other side. Serve hot. Have fun with adding any toppings you desire! One of my kiddos loves adding Nutella along with the fruit and powdered sugar. Yum!


Using all-purpose gluten-free flour in this recipe does not work; yes, we have tried it. The batter ends up too soft and sticky and quickly turns into a disaster. The best, stress-free way to enjoy gluten-free crepes is to purchase Krusteaz's pancake mix, follow the steps for making pancakes, and then water down the batter until it is the consistency for crepes.  :)

I also stumbled upon this interesting blog that shares a gluten-free recipe for making gluten-free pancakes from scratch and then outlines the best gluten-free flours to use. I am easily confused with too much information, but Laura does a great job simplifying flour for those of us who need gluten-free options. I also love her idea of freezing pancakes ahead and am guessing that a person could also freeze crepes, too. 




Another breakfast item we love is quiche! We simply beat twelve eggs in a large mixing bowl, and add chopped onion, mushroom, bacon, salt, and pepper. Then, we put cupcake holders inside cupcake pans and create miniature quiche. After they have baked for 25-30 minutes (350 degrees), we wrap each little quiche in plastic wrap and freeze them in a gallon-size ziplock bag. This way, each weekday morning, we can grab a quiche to quickly pop in the microwave.  :)
