Grateful

       I am very grateful for a full and crazy life! I have determined to not be disappointed when I have little time to blog and to simply write when I can. :)  As previously mentioned, our family loves eating crepes. We don't always have the chance to eat them in the morning due to our crazy schedules, so we occasionally have breakfast for dinner, which is a family favorite. Usually, a Saturday or Sunday night is the time to whip up the following Allrecipes crepes and add berries and whipped cream on top. Mmm... yum!!!   :) Crepes Ingredients: 1 cup all-purpose flour 2 eggs 1/2 cup milk (we substitute with lactose-free milk) 1/2 cup water 1/4 teaspoon salt 2 Tablespoons butter, melted *In a large mixing bowl, whisk together the flour and the eggs. Gradually add in the milk and water, stirring to combine. Add the salt and butter; beat until smooth. *Heat a lightly oiled skillet over medium-high heat. Scoop 1/4 cup of batter onto the skillet to make each crepe.  *Cook for 2 minutes

~A New Year to Balance~ 2022

                                                   It's that time of year when we make resolutions for the months ahead, hoping to be better people in all areas of our lives.  :)            One area I strive to improve, is balancing home life and school. Our blended family has seven children total, though just four live with us. The other three live on their own and we love it when they come to visit or we visit them. Considering the speed of life at this point, they mostly come to see us.  :)      The long six year journey I took to finish my schooling as a single parent, is beginning to pay off! I am in my third year of teaching (Initial Teacher License), and recently applied for my Professional License which is good for seven years. I cannot articulate the excited sense of relief when my application was approved and I received my Professional License in my inbox. I am officially a "professional" teacher!  :)     I remarried after my first year of teaching, and must adm

~Time~

  The last time I wrote on this blog, was right after I had graduated from UCCS with a BA in Elementary Education, which included two endorsements (SPED & CLDE). I began working at a small rural school, and am presently in my third year of teaching.   Where do I begin updating you on my life?!  :) For quite some time, I have felt a stirring inside to begin writing again. For the past five or six years, I had to live busy due to survival as a single parent finishing a college degree to become a teacher. Now, however, the stirring in my heart has grown stronger, and I must slow down. :)   I'm sure you've heard the saying, "The mountains are calling my name and I must go"?                                                             Slowing down and writing reflectively is calling, and I must go. :) The purpose for this blog is to keep family updated, to share various gluten-free and/or Keto recipes, and to share -or sometimes process- my thoughts. I have discovered t
